Quick and simple vegan vegetable and lentil Dhal.

Ingredients

Vegan Dhal

  • 900 grams Vegetables (Optional: Your choice Sweet potatoe, butternut squash, carrots, cauliflower, brocolli to name a few)
  • 100 grams Red Lentils and
  • 125 millilitre Stock
  • 1 tin Chopped Tomatoes
  • 1 tin Coconut Milk
  • 1 Onion, Dried if no fresh or short on time
  • 2 cloves garlic
  • Fresh Ginger
  • 1 garam masala (or other curry powder)
  • 1 Teaspoon Paprika
  • 1Teaspoon Cumin
  • 1 Teaspoon Corriander
  • 1 teaspoon Turmeric
  • Salt & Pepper
  • To Serve - Non Dairy Yoghurt

Method

Cook Onion and Garlic in water

Chop vegtables and add to pot and cook for a 5 minutes

Add lentils, water, tin of chopped tomatoes, coconut milk, curry powder, salt, and pepper

Increase heat to high and bring to a low boil the reduce heat to medium and cook, uncovered for 30 minutes until lentils are cooked.
Or pop in pressure cooker for 30 minutes

Quick Fast food popped in a pressure cooker.

You can use any veggies whatever is lurking in your kitchen or just your favourite. I tend to useĀ Butternut squash, sweet potato, carrots, broccoli, courgettes & peas as always around

Serve with Rice and Naan Bread

Do you soak dried red lentils?No need to soak or pre-cook the dried red lentils.

This is also great turned into a pie filling or pastie filling
