Ingredients
Vegan Dhal
- 900 grams Vegetables (Optional: Your choice Sweet potatoe, butternut squash, carrots, cauliflower, brocolli to name a few)
- 100 grams Red Lentils and
- 125 millilitre Stock
- 1 tin Chopped Tomatoes
- 1 tin Coconut Milk
- 1 Onion, Dried if no fresh or short on time
- 2 cloves garlic
- Fresh Ginger
- 1 garam masala (or other curry powder)
- 1 Teaspoon Paprika
- 1Teaspoon Cumin
- 1 Teaspoon Corriander
- 1 teaspoon Turmeric
- Salt & Pepper
- To Serve - Non Dairy Yoghurt
Method
Cook Onion and Garlic in water
Chop vegtables and add to pot and cook for a 5 minutes
Add lentils, water, tin of chopped tomatoes, coconut milk, curry powder, salt, and pepper
Increase heat to high and bring to a low boil the reduce heat to medium and cook, uncovered for 30 minutes until lentils are cooked.
Or pop in pressure cooker for 30 minutes
Quick Fast food popped in a pressure cooker.
You can use any veggies whatever is lurking in your kitchen or just your favourite. I tend to useĀ Butternut squash, sweet potato, carrots, broccoli, courgettes & peas as always around
Serve with Rice and Naan Bread
