Laksa a spiced coconut broth with comforting noodles.

Ingredients

Spices Laksa Broth

  • x2 Onions
  • x4 Large garlic cloves
  • Inch of Fresh Ginger
  • 2 tbsp red curry /Thai curry paste
  • 1 tbsp tamari / coconut aminos
  • 2 tsp bouillon powder (Marigold low salt)
  • 1 Tin of coconut milk
  • 1 tsp turmeric
  • 1 tsp coriander or fresh

Serving Laksa

  • Peanuts
  • Fresh raw carrots
  • Fresh slices of pepper
  • Spring Onions

Method

Preparing the broth

Chop onions, garlic and fresh ginger and lightlu fry in water.

Add the curry paste, bouillon, water, coconut, tamari, turmeric and corrider if dried.

Chop butternut sqaush into cubes and place in the broth to cook,

Serve with carrots, peppers, spring onions and peanuts.
