Based Cauliflower, Chickpea and Onion Salad with a Tahini Dressing

Ingredients

Salad

  • Tin of Chickpeas
  • Cauliflower
  • Onions
  • Smoked Paprika
  • Cumin
  • Soya Sauce
  • Liquid Smoke

Dressing

  • 2 tbsp Tahini
  • Soya Sauce
  • Sesame Oil (optional)
  • Balsamic Vinegar
  • Fresh Grated Ginger
  • Roasted Garlic
  • Chilly Paste or Sriracha
  • x2 Spring Onions
  • Liquid Smoke
  • Lemon Juice
  • Water

Method

Preparing the spices

Drain Chickpeas of liquid.

Mix the spices and liquid in a bowl and toss the chickpeas until covered in flavour.

Mix chilli powder with 1 tsp vegetable oil and add salt to it.

I cook in an air fryer but you can also do in a oven.

Air Fryer: Lay foil on the bottle of the air fryer and pop the chickpeas in and start to cook for about 12 minutes to start to dry them out.

While that is cooking chop cauliflower and onion up and toss in the remains liquid that the chickpeas were in the all some flavour.

A few time remember to shake them up and move them around.

Once the chickpeas are finished pop the cauliflower and onions on top of the chickpeas in the airfryer and cook for another 10 minutes. Occasionally tossing and checking on them.

Tahini Dressing

This is so simple pop all the ingredients into a bowl and mix then let and sit until vegetables are cooked.
