Moroccan Stew
- 5 Garlic Cloves
- 1 Bay Leaf
- 1 Large Onion
- 1 Carrot 1
- 1 Red Pepper
- 1 Tin chickpeas
- 1 Tin Tomatoes
- 1 Passata
- Vegetable Bouillon
- Dried Apricots
- 1 tbsp tahini
- 1 tbsp Ras-el-Hanout Spice
- 1 tsp Oregano
- 1 tsp Basil
- Sweet Chilli Sauce (optional)
- Coriander
Method
Chickpea Stew

Fry onion and garlic in water or oil if you prefer.

Add the carrots, chickpeas, peppers, tin tomatoes. passata sauce, spice mix, tahini, and water/vegetable broth.
I tend to buy a pre-mixed ras-el-hanout spice. I have taken a photo of the ingredients so you can see the range of spices that are used to blend this amazing taste.
