Ingredients
Curry
- 1 Large Cauliflower
- 4 Cloves Garlic
- 2 inch Ginger
- One large red Onion
- Coconut Milk
- Passata
- Fresh Coriander to serve (optional)
Curry Spices
- 1 tbsp Garam Masala
- 1 tea spoon mild curry
- 1/2 tsp Turmeric
- 1/2 to 1 tsp Cayenne Pepper
Method
Preparing Cauliflower
Turn on oven. Break cauliflower in florets
Take 1/3 of the coconut milk, mix with one cloves of garlic and half the ginger. (optional add some curry powder) then toss the cauliflower in it.
Place in oven to start baking while you make the sauce. Keep an eye on it as you just want it to brown. Thinking about 20 mins
Making Curry Sauce
Chop onions and start to fry ( I do this in water as try not to have oil in my diet). Then add the rest of the crushed garlic and ginger.
After 5 mins cooking start to add the the spices. I make sure there is a little water still from the frying in the bottom to make a paste.
Add the passata and rest of the coconut milk. Stir to combine and cook until starts to thicken.
Add cauliflower and the juices from the oven to the sauce. Add fresh coriander.
Serve with rice and quinoa, naan bread and mango chutney.
