Ikea Vegan Meatball
Who doesn’t love vegan veggie balls when you go to Ikea?

Ingredients
Meat Ball Vegetables
- X1 Medium Red Onion
- X2 Carrots
- X4 Garlic Cloves
- X1 Red Pepper
- Large handful Spinach
- Tin of Chickpeas
- 1/3 tin Sweet Corn
- Peas
MeatBall Herbs and Spices
- 1/2 tsp Turmeric
- 1 tsp Sage
- 1 tsp Parsley
- 1/4 tsp Pepper
- 1/4 tsp salt
- 1/2 tsp smoked paprika
- 1 tsp Sugar
- 1/2 tsp garlic powder (if no fresh or want extra garlic)
- 1 1/2 tbsp Nutritional Yeast
- Oat Flour
Method
Preparing Veg
Onion, garlic carrots, and red pepper. Chop into chunks then pop in a food processor and blitz till small (not puree)
Put a small amount of stock and water in a pan to fry the veg from the food processor. Cook until just turning soft then set aside and let cool.
Blend the Spices and Herbs
Put all the herbs and spices into a cup and mix together.
More Veg to meatballs
Now pop the chickpeas in the food processor and the already prepared vegetables and blitz. Not making chickpea smooth but into smaller pieces
Pop into a bowl and mix the spices and herbs evenly throughout.
Now start forming the bowls. If the mixture is a little too wet add oat flour to absorb the moisture.
Pop in an 200c oven and bake them for 20 minutes until crispy.
Make a spicy tomato sauce to spread over them.
I am a Ikea veggie meatball lover and with Covid, this year and lockdowns I have missed my treat so thought I would try my own version. I have also made into patties to be burgers.
Made too many pop them in the freezer.
