Ingredients
Moroccan Stew
- x2 large onions
- x4 cloves of garlic
- x2 large carrots
- x2 white potatoes
- sweet potatoes
- butternut squash
- Raisins (natural Sweetness optional)
- Green lentils
- Red Lentils
- Tin of chopped tomatoes
- tin of chickpeas
- VegetableĀ Bouillon / stock
- 3 tsp cumin
- 3 tsp Cinnamon
- 2 tsp Smoked Paprika
- 1 tsp Ground coriander
- 1 tsp Ground ginger
- 1/2 tsp Black pepper
- 1/2 tsp cayenne pepper
- 1 tsp allspice
- 1 tsp ras el hanout
Serve With
- coconut vegan yoghurt
- jalapenos
- avocado
- spring onions
- pomegranate
- fresh coriander
- Rice and quinoa flavoured with ras el hanout
Method
Preparing the stew

Chop onion and garlic and fry in a little water.
Chop other veg

Pop everything in the pressure cooker / instapot
Cook

Pop in instapot and set to beans and let cook for 20 mins.
