Ingredients

Moroccan Stew

  • x2 large onions
  • x4 cloves of garlic
  • x2 large carrots
  • x2 white potatoes
  • sweet potatoes
  • butternut squash
  • Raisins (natural Sweetness optional)
  • Green lentils
  • Red Lentils
  • Tin of chopped tomatoes
  • tin of chickpeas
  • VegetableĀ Bouillon / stock
  • 3 tsp cumin
  • 3 tsp Cinnamon
  • 2 tsp Smoked Paprika
  • 1 tsp Ground coriander
  • 1 tsp Ground ginger
  • 1/2 tsp Black pepper
  • 1/2 tsp cayenne pepper
  • 1 tsp allspice
  • 1 tsp ras el hanout

Serve With

  • coconut vegan yoghurt
  • jalapenos
  • avocado
  • spring onions
  • pomegranate
  • fresh coriander
  • Rice and quinoa flavoured with ras el hanout

Method

Preparing the stew

Chop onion and garlic and fry in a little water.

Chop other veg

Pop everything in the pressure cooker / instapot

Cook

Pop in instapot and set to beans and let cook for 20 mins.

This is yummy and be eaten in many ways. In the warmers months with salad
