Quick Vegan Oat Cookies
I love recipes to use up ripe bananas and this is so simple. I also love no sugar required!
3 ingredient vegan oat cookies such a quick recipe.
I like to add dried fruit like raisins but you can always be naughty and add some vegan chocolate chips.

Ingredients
Oat Cookies
- 2 cups Oats
- 3 Large Overripe Bananas
- 1/2 Cup Peanut Butter(crunchy or smooth)
- Raisins or other dried fruit (optional)
- Extra special Treat can always add vegan dark chocolate chips (optional)
Method

Turn the Oven on 180 degrees

Pop all ingredients into food processor and blitz together.
Tends to work better if banana is slightly mashed before but otherwise blitz a little longer.

I roll 10 / 12 balls and place on a baking tray and squash with a fork to mke cookies.

Bake 10 / 12 minutes and take out and pop on cooling tray.
