Vegan Soup

  • 1 tablespoon olive oil
  • 1 Onion
  • 2 cloves garlic
  • 30 grams Vegan Margarine
  • 900 grams Butternut Squash
  • 900 millilitre Vegan Stock
  • 2 teaspoon Sage, rosemary
  • 2 teaspoon Thyme


Butternut squash soup


To Roast butternut squash add rosemary and roast for 45-50 minutes, or until the squash is tender and has turned golden-brown in places. You can make this soup without roasting if you are short of time.


Gently sauté the onion and garlic.


After about 5 minutes, add the butternut and stock and stir well


Bring to the boil. Simmer for 25 minutes until soft and blend
