Ingredients
Vegan Soup
- 1 tablespoon olive oil
- 1 Onion
- 2 cloves garlic
- 30 grams Vegan Margarine
- 900 grams Butternut Squash
- 900 millilitre Vegan Stock
- 2 teaspoon Sage, rosemary
- 2 teaspoon Thyme
Method
Butternut squash soup

To Roast butternut squash add rosemary and roast for 45-50 minutes, or until the squash is tender and has turned golden-brown in places. You can make this soup without roasting if you are short of time.

Gently sauté the onion and garlic.

After about 5 minutes, add the butternut and stock and stir well

Bring to the boil. Simmer for 25 minutes until soft and blend
