Simple Vegan Cinnamon Buns

Ingredients
Bun Mix
- 1 Cup Soya Milk, cut use 2/3 water 1/3 plantbased milk
- 1 packet Yeast
- 1/4 Teaspoon Salt
- 1/4 Cup Coconut Oil, or vegan marg
- 3 Cups Flour
Bun Content
- 2 Tablespoons Brown Sugar
- 1 Tablespoon Cinnamon
- 2 Tablespoons Coconut Oil
- 1/2 Cup Pecans, Optional
- 1/2 Cup raisins, Optional
Basic Icing
- 2 Tablespoons Icing Sugar
- Milk, to mix
- Vanilla , optional
Method
In a large sauce pan put milk and coconut oil to melt.
Remove from heat and let cool ( It should be warm but not too hot or it will kill the yeast.)
Transfer mixture to a large mixing bowl and sprinkle on yeast. Let activate for 10 minutes. Then add 1 Tbsp sugar and the salt and stir.
Now add flour
cover with a damp dish towel. Let the dough ferment at room temperature until doubled in size
On a lightly floured surface, roll out the dough into a thin rectangle.
Melt a table spoon of coconut oil in microwave
Mix sugar and cinnamon in a seperate bowl until combined
Paste the coconut oil all over the dough.
Once everywhere covered sprinkle with the cinnamon sugar and pecans if you are adding
Starting at one end, tightly roll up the dough
Cut with a serrated knife in 1.5in slices and placed in baking tin.
Place in oven at 180 degrees for 30 mins
