These Healthy Peanut Butter Blondies are gluten-free, dairy-free, refined-sugar free and vegan friendly! Made with chickpeas but you’d never know it! It’s the perfect healthy dessert recipe that you can feel great about indulging in!

- tin chickpeas
- half Cup peanut butter
- third cup maple syrup
- half teaspoon salt
- quater teaspoon baking powder
- quater teaspoon baking soda
- choc chips
Preheat the oven 180c, gas mark 4, 350F
Line a baking tray ready for the mixture
Rinse the chickpeas (remember to save the water aquafaba with can be used instead of eggs in recipes)
Put all ingredients except chocolate chips into your food processor.
Blend until smooth and no chickpeas can be seen. (It’s quite thick in texture & tastes yummy if you dipping your finger in)
Fold in half the chocolate into the mixture
Spread the mixture evenly into the baking tray
Now sprinkle with the rest of the chocolate
Place in the oven and bake for 25 minutes
It can be quite soft until cooled so allow half an hour. If like use it doesnt last that amount of time.
