Super simple tasty vegan jambalaya, satisfying and nutritious.

Ingredients

jambalaya

  • x2 Onions
  • X4 Garlic Cloves
  • Celery (optional)
  • Red, Green, Yellow Peppers
  • Carrots
  • Courgette
  • Tinned Tomatoes
  • Passata
  • Mixed Beans - Kidney etc
  • Chick Peas (optional)
  • Brown Rice
  • Vegetable Stock / Bouillon

Herbs and Spices

  • 2 tbsp soy sauce or tamari
  • 2 tsp Oregano
  • 1 tsp Thyme
  • 1 tsp Dried Garlic
  • 1 tsp Dried onion
  • 1 tsp Cumin
  • 3 tsp Smoked Paprika
  • 1 tsp Turmeric
  • Pinch Ground black pepper
  • Pinch Cayenne powder (more if like it hotter)
  • Sweet Chilly Sauce (optional)

Chop vegetables
